Chicken fricassée is a classic French white stew in which chicken is gently browned, then braised with aromatics, mushrooms, wine, stock, and herbs. Cream and egg yolk may be used to enrich the sauce, producing a refined dish that still feels deeply homely.

- Double cream – 180 ml

- Lemon juice – 15 ml

Preparation Overview
Season and lightly flour the chicken, colour it gently without creating a dark crust, then braise it with vegetables, wine, stock, and herbs. Cook the mushrooms separately and finish the strained sauce with cream, egg yolk, and lemon.
Method
- Season the chicken with salt and white pepper, then dust lightly with 30 g flour.
- Heat 25 g butter and the oil in a Dutch oven over medium heat. Colour the chicken lightly in batches without deeply browning it.
- Remove the chicken. Add the onion, carrot, and celery and cook for 6 minutes. Stir in the garlic for 1 minute.
- Add the remaining flour and cook for 1 minute.
- Pour in the wine and stir until smooth. Add the stock, thyme, and bay leaves.
- Return the chicken. Cover partially and simmer gently for 35 to 40 minutes until tender.
- Meanwhile, sauté the mushrooms in the remaining butter until lightly golden.
- Transfer the chicken to a warm tray. Strain the braising liquid into a clean saucepan, pressing lightly on the vegetables.
- Simmer the sauce until it lightly coats a spoon. Add the mushrooms and cream.
- Whisk the egg yolk with 60 ml warm sauce, then stir it back into the pan off the heat. Add the lemon juice.
- Return the chicken and warm gently without boiling. Finish with parsley and rest for 10 minutes.
Beginner Technique Notes
- Fricassée should remain pale, so colour the chicken lightly rather than searing it dark brown.
- Temper the egg yolk with warm sauce before adding it to prevent scrambling.
- Once enriched with egg yolk, the sauce must not boil.
Tips and Variations
Use only cream and omit the egg yolk for a simpler finish. Pearl onions may be added with the mushrooms. Chicken breast can be included, but remove it once cooked and return it only for reheating.
Best Served With
Serve with mashed potatoes, buttered noodles, rice pilaf, or crusty bread. For another French comfort dish, try French Ratatouille.
Storage
Refrigerate for up to 3 days. Reheat slowly over low heat without boiling. For freezing, freeze the braised chicken and sauce before adding cream and egg yolk, then finish with fresh dairy after thawing.

Frequently Asked Questions
Can I skip straining the sauce? Yes, for a rustic version, but straining creates the classic smooth finish.
Why did my sauce curdle? It was likely boiled after adding cream and egg yolk. Finish the sauce off the heat or over very low heat.
