Caldo verde is one of Portugal’s most beloved soups: humble, silky, and deeply comforting. Potatoes create the creamy body without cream, while finely shredded kale and a few slices of chouriço bring freshness, smoke, and colour.

Ingredients
- Waxy potatoes, peeled and diced – 800 g
- Yellow onion, sliced – 220 g
- Garlic, sliced – 18 g
- Extra-virgin olive oil – 60 ml, plus extra to finish
- Chicken or vegetable stock – 1.4 litres
- Portuguese chouriço – 180 g
- Kale or collard greens, stems removed – 250 g
- Fine salt – 10 g, or to taste
- Black pepper – 2 g
Preparation Overview
Cook the potatoes, onion, and garlic until completely tender, then blend the soup until smooth. Slice the greens into extremely fine ribbons and add them only near the end so they remain vivid and tender.
Method
- Warm 30 ml olive oil in a heavy pot over medium heat.
- Add the onion and cook for 7 minutes without browning. Stir in the garlic for 1 minute.
- Add the potatoes, stock, salt, and half of the chouriço. Bring to a gentle simmer.
- Cover partially and cook for 25 minutes, or until the potatoes collapse easily.
- Remove the chouriço. Blend the soup until completely smooth, then return it to a gentle simmer.
- Roll the kale leaves tightly and slice them into very fine ribbons.
- Add the kale and cook for 4 to 6 minutes, just until tender.
- Slice the reserved chouriço and return half to the pot. Adjust the seasoning.
- Ladle into bowls and finish with the remaining chouriço, black pepper, and a light drizzle of olive oil.
Beginner Technique Notes
- Do not brown the onion; caldo verde should taste clean rather than caramelised.
- Slice the kale as finely as possible for the traditional texture.
- Blend carefully in batches if using a countertop blender.
Tips and Variations
Use vegetable stock and omit the sausage for a plant-based version. For a lighter soup, reduce the potato to 650 g. Do not add cream; properly blended potatoes provide the characteristic silky consistency.
Best Served With
Serve with crusty bread, grilled sardines, or a simple tomato salad. Readers may also enjoy One-Pot Pasta e Fagioli for another hearty, rustic soup.
Storage
Refrigerate for up to 4 days. Reheat gently and add the kale only after reheating when preparing the soup in advance. Freeze the potato base for up to 2 months, then add fresh kale after thawing.

Frequently Asked Questions
Can I use curly kale? Yes. Remove the tough stems and slice the leaves very finely.
Why is my soup gluey? Over-blending starchy potatoes can make them sticky. Blend only until smooth.
