  • 1 cup long-grain rice
  • 1 cup cooked red kidney beans (or canned, drained)
  • 1 cup coconut milk
  • 1 ½ cups water or broth

  • 1 scallion, chopped
  • 1 Scotch bonnet pepper (whole)

Instructions
